Students embrace healthy cooking in collaborative 'Healthy Sundays' series

      by Kathleen Hodgkins

On Sunday, March 24, Central Michigan University students in the Health Professions Residential College teamed up with the Student Community Builders’ chairperson Ana Silvia Ferreira Roberto da Matta to engage in a healthy cooking class.

The event was part of a series titled “Healthy Sundays” that took place in the Allen Foundation Culinary Nutrition Center. The goal of the event was to broaden the students' nutrition and cooking knowledge.

Eleven students pose together in front of a table in the test kitchen on campus.

“The event was so much fun! We ended up making muffins/cupcakes that are gluten-free and sugar-free (except for the chocolate chips we put on them),” Ana stated. The students could choose if they wanted to make her mom’s recipe with apples or bananas.

The newly renovated Allen Foundation Culinary Nutrition Center in Wightman Hall boasts 12 workstations equipped with commercial-style ovens and modern food service equipment. According to Dr. Fisher, “it's a state-of-the-art facility that enhances the learning experience for students in the Nutrition and Dietetics program.”

The courses offered here include NDS 160 Introduction to Cooking, NDS 361 Food Science, and a new course offered every fall, NDS 291 Introduction to Wine.
